In retrospect, we would probably have listened to our mothers insisting on cooking **spinach, broccoli and green beans** and not getting us up from the table until we had emptied the dish. "**Eat your veggies!**" she always screamed.

 

 

**Who knew that vegetables were really so important?** We would have eaten tons: now, perhaps, we would all be more beautiful, healthy, fit, with flowing hair and peachy skin... **But do not despair**, you are still in time to enjoy the benefits of vegetables, just arm yourself with curiosity and desire to experimen and learn; but most of all, go to the best **greengrocer** in town.

You cannot imagine how many vegetables, which I thought disgusting, I discovered to be actually delicious and rich in nutritional properties!

For example, have you ever eaten the **watercress**?

 

 

It is a **bushy-looking plant**, with thin, oval, deep green leaves and stems as tall as 20 centimetres. It produces small, white flowers, while the seeds are dark red. Its taste is particularly aromatic, **between acidulous and spicy**: if you have eaten it, you surely remember it.

 

 

And – that’s the thing - the watercress is part of many beauty formulations: the extract of its sprouts **has powerful antioxidant properties**.

 

## Watercress sprouts extract, what else?

Watercress sprouts are spatial: they contain a lot of Vitamin K, followed by Vitamin C and Vitamin A. If consumed as food, the sprouts have many properties - **purifying, remineralizing, tonic, regenerating** for the bacterial flora.
